    What is gentrification? According to Briney (2009), gentrification is rich people move into the area that poor live. Gentrification has relationships with food. It happened in many countries. There are some reasons. First of all, cost of living in downtown rise, and middle class wants to find some place that is near downtown and relatively cheap. At the meaning time, there are some places that the poor live, and these places are convenient for middle class to go to work. So the rich move in and displace the original residents. Gentrification can bring some benefits for middle class. For example, middle class doesn’t need to pay expensive rent, but they have a similar living level with people who live in center of city. Based on these reasons, gentrifications occurred. Gentrification had effect on food, because different restaurants will be opened, and environment also changed.

    Gentrification has positive effect on the diversification of food. With the development of gentrification, different kind of restaurants will operate. According to Freeman (2006), before gentrification, there are lacks of retail amenities, and it leads to be inconvenient and decrease the living level. The poor must buy food that was high price but low nutrition. When the rich bring investment, many supermarkets will be built, and fresh food such vegetable and meat will be provide. In addition, these are much more drugstores, and is convenient to buy food. For example, the single mother Tine likes gentrification.

    Gentrification can bring many different restaurants. She can go to eat food that she hasn’t eaten with her children. Gentrification will not only increase the quantity of food, but also it can improve the quality of the food. Along with the gentrification, environment wills positively change. The environment is dirty and in a mess before. The middle class have higher requirement of quality of the food. Street food will improve the quality to meet the requirement.

    For example, street food can get more security and trust. According to Gartenstein (2012), Street food is not same as the sit-down restaurant that has hand washing or bathroom, so it usually is thought is not clean. After gentrification, the health department will sign commissary and use of restroom agreement with the vendor who also must be inspected. Eventually the street food will become clean and health.

    Gentrification can low the price of the food. According to Izadi (2011), because of gentrification, presence of money will increase, and that means goods will be produced more than before, but competitors are constantly trying to one-up each other. So eventually, price of food will decrease. For example, Izadi was surprise when she saw an organic red pepper that just sold $0.99. That is a positive effect for residents.

    Gentrification can affect the food in some way. There are some positive effects. Gentrification also has the negative effects. But in the future, the bad effect of gentrification will be removed, and it will be popular. And he meaning time, there are some places that the poor live, and these places are convenient for middle class to go to work. So the rich move in and displace the original residents.
